Roasted Cabbage with Smoked Paprika Garlic Butter
Ingredients
- 1 medium head of green cabbage 
- 3/4 cup salted butter, softened 
- 1 tablespoon smoked paprika 
- 2 garlic cloves, grated 
- Juice & zest of 1/4 a lemon, plus lemon wedges for serving 
- Salt & pepper to taste 
- 2 tablespoons crumbled cotija cheese 
- 2 tablespoons fried onions [store bought is perfectly fine!] 
- 2 tablespoons chopped chives 
- Maldon salt for garnish [optional]

Steps
- Let salted butter come to room temperature on the counter, about 30 minutes. Meanwhile, prep your other ingredients. 
- Chop chives & set aside. 
- Grate garlic cloves & combine with smoked paprika, salt, pepper & juice & zest of 1/4 a lemon. Set aside. 
- Line a baking tray with parchment paper. 
- Remove the outer layer of leaves on the cabbage head & wash to remove any excess dirt. Cut cabbage into wedges, then transfer to a baking tray & lightly season with salt & pepper. Set aside. 
- Once butter has softened, preheat the oven to 375 F degrees. Combine softened butter with spice, garlic & lemon mixture. Using a fork, mix to combine. 
- Using a pastry brush [a non-serrated knife also works], coat all sides of each cabbage wedge with butter. 
- Roast cabbage for 25 minutes until leaves are nicely browned & tender. 
- Plate cabbage wedges on a serving plate. Garnish with crumbled cotija cheese, fried onions, chopped chives & a pinch of maldon salt or any type of preferred salt. Serve with extra lemon wedges & enjoy!
