Coconut, Almond, and Pepita Chocolate Clusters
Ingredients
- 1/2 bag of semi-sweet chocolate chips 
- 1 tablespoon coconut oil 
- 2 1/2 cups brown rice crisps 
- 1/4 cup finely chopped almonds 
- 1/4 cup pepitas [plus more for garnish] 
- 1/8 cup shredded coconut [plus more for garnish] 
Prep time: 10 minutes
Chill time: 20 minutes
Total time: 30 minutes
Servings: about 15 clusters
Steps
- Melt half a bag of semi-sweet chocolate chips & 1 tablespoon coconut oil in the microwave until smooth. 
- While chocolate is melting, mix together brown rice crisps, chopped almonds, pepitas, & coconut shreds. 
- When chocolate is melted, let cool for 10 seconds & fold into the dry mix until evenly coated. 
- Using a spoon, scoop out rice puff, nut, & chocolate mix & form into cluster-like shapes on a parchment paper-lined baking tray. 
- Sprinkle remaining pepitas & coconut shreds on top of clusters. 
- Place clusters in the refrigerator for 20 minutes until cool & hardened.
